But it's a decent camera (still) with decent lenses. The camera isn't dead (40K clicks). A D750 is newer and twice the pixel count and a little better at high and low ISO but not built to quite the same standard as its predecessor. Then you'd have to get some lenses for it, too.

Get the D90 instead. The Nikon D90 is Nikon's newest and smartest DSLR. It has the same or better technical image quality as the D300 that costs much more, and it handles better and it makes movies, too! The D90 is newer and better than the D300, for a fraction of the price, so long as you prefer the D90's lighter plastic body.
It will definitely produce the best quality images without going into the FX price range. Get yourself a Nikon d300. It is cheaper than the d7000 (last time I checked it was about $460 on ebay). It has 51 points of auto focus and a full metal frame, unlike the d7000 which is only half metal.
Whatever lenses you buy today will last you for many new cameras to come. For instance, I bought my 17-35mm back for use on my F100 film camera in April 2000, and it's still Nikon's toughest and fastest ultrawide zoom today. See Lens or Camera and Is It Worth It. Unlike camera bodies, the best of these lenses actually appreciate in value over time.
D700 is still much cleaner than D7000 and it certainly retains a lot more details in shadows and highlights. ISO 12,800 and 25,600 look better on the D700, but still unusable on both cameras as far as I am concerned. In my part of the world, most Nikon FF bodies that have seen 150k shutter counts or less have prices above $700. I have seen a Nikon D3 being priced the same as a Fuji XT-2 (about $1k). So yeah, for a budget one ends up getting really beat up bodies with high shutter.
